Course work for a studio course concerning labor and housing. A bakery with a winter garden and housing for the bakers.
Housing contains four apartments, two larger and two smaller ones, with common spaces on ground floor. Ground floor connects to winter garden which is open for customers when bakery is open, otherwise used as recreational space for workers.
Baking facilities are 140m2. One fermenting room and one oven. Separate cooling and packing room with a window that connects to the winter garden, where baked good are sold.
Bakers wake up at 3 AM, and start baking at 4 AM. Bakery / cafe opens at 7 AM. Baking continues until noon. Bakery / cafe is open until 6 PM.
